In a glass jar, add minced garlic, dijon mustard, balsamic vinegar and olive oil. Place the lid on the jar tightly and shake vigorously until the mixture emulsifies and becomes thick and smooth.
If you do not have a jar, you can use a glass or metal bowl and a wire whisk. Add garlic, mustard and balsamic vinegar into the bowl and slowly pour and whisk in the olive oil. Whisk until the mixture emulsifies and thickens.
Transfer dressing in a salad carafe or mason jar.
Pour over salad to use as a salad dressing or for a savory marinade, pour over chicken, pork, seafood or vegetables.
