Fresh, simple and easy to make, this Balsamic Dressing and Marinade is all you need to make a great summertime meal.  There is no need to take up space in your pantry or refrigerator with various bottles of salad dressings when you can have this delicious dressing. There are no mystery ingredients or hard to pronounce preservatives.  

Just 4 simple ingredients and a jar and you have everything you need to have a delicious, healthy dressing on hand. 

It is easy to make and versatile to use.  The basic components include fresh garlic, olive oil, balsamic vinegar, and dijon mustard.  You can also add lemon juice and a touch of brown sugar or honey for a slightly sweeter dressing.

It is amazing over a salads, made of mixed greens and strawberries and blueberries, and is equally delicious with a more “savory” salads.  Drizzle over Caprese salad or avocado slices and you have a real treat!

I make this recipe weekly.  I typically double it, using half for salads and the other half for marinades.  I have found that chicken and seafood are the proteins for this marinade.  Fresh, easy and takes little time to make the perfect meal.

Balsamic Dressing and Marinade

Ingredients
  • 1 c olive oil extra virgin
  • 3 tbsp balsamic vinegar
  • 1 tbsp dijon mustard
  • 1-2 garlic cloves freshly minced
Instructions
  1. In a glass jar, add minced garlic, dijon mustard, balsamic vinegar and olive oil.  Place the lid on the jar tightly and shake vigorously until the mixture emulsifies and becomes thick and smooth. 

  2. If you do not have a jar, you can use a glass or metal bowl and a wire whisk.  Add garlic, mustard and balsamic vinegar into the bowl and slowly pour and whisk in the olive oil.  Whisk until the mixture emulsifies and thickens.

  3. Transfer dressing in a salad carafe or mason jar. 

  4. Pour over salad to use as a salad dressing or for a savory marinade, pour over chicken, pork, seafood or vegetables.
